Meat Analogs

An excellent story about the booming meat substitutes industry appeared in the Star Tribune this week. I'm excited to hear that soybean "steak" strips will be in supermarket freezers soon. They taste like a cow, but they're actually beans. Yum! I can't wait to try them. I'm thinking about ways to serve them already. Maybe I'll serve up my steak strips with garlic toast, pickled peppers, and tomato slices like a steak from Mancini's Char House.
Or maybe I'll grill up my steak strips with onion and peppers for sizzling soy steak fajitas. Mmmm . . . I can practically smell the smoky fajita aroma. My stomach is growling.
